The legendary Napa Valley is notorious for producing some of the most complex Cabernet Sauvignon in the New World. With hot days and cool nights, the grapes develop balanced acids and thick skins, resulting in rich tannins and superior color and flavors.
We farm our Napa Valley vineyards with these climate conditions in mind. By managing the canopies correctly, we encourage smaller berries, resulting in a high skin to juice ratio. With these small berries we can optimize the excellent flavors and color.
Our exceptional vineyards within the appellation, Skellenger Vineyard and Ball Lane Vineyard , combine to make this 2007 Cabernet Sauvignon complex and compelling . The rocky loam soils force the vines to struggle for water, producing grapes that are packed with rich chocolate and tobacco flavors, with layers of dark cherries. The wine was aged in a combination of French and American oak for 24 months. This wine should pair well with many of your favorite roasted meats, grilled vegetables or with many assorted cheeses. Aging potential for this wine is 10 – 15 years.
